Sounds like a low moisture Mozz. I have seen the story of the pans and building the pizza up to the walls of the pan. When I moved to So Flo, the pizza here was crap. I was able to reverse engineer a sauce that is identical to my memories of a 1970s South Philly (Yo!) Sauce

Had to dive into Wikipedia to see the diff. Looks like the thick crust is what we'd call in my Philly childhood a Sicilian or Thick Crust pizza. I'd nom my way through that and enjoy. "Wisconsin Brick" looks like Muenster made in Mikwaukee?

Sorry for your loss of your good boy! Yes, they are amazing, when my 14 y/o had reliable hearing he understood what we were saying and would act like it. Blew our minds. Now it is "Selective" even if he's still going strong. They are not common at all here, our loss, I'd do it again immediately.

I have a herding dog that gets upwards of 5 miles a day, and it keeps him sane. My avatar, Rack, he's now 14 and everyone is amazed that it keeps him acting much younger.

I am living in Broward County, FL. I workout 3x a week at Pompano Beach Airpark. The parking lot is only 1/4 full. Saw my first Quebec license plate there near the pro shop since this started. Very few Canadian plates on the roads around here. I miss you folks, but it's the right thing to do.
