The Creature is probably both horrifying to look upon, and yet strikingly handsome. I think both of these are possible, depending on the POV, the context he appears in, the "state" his body is in, lighting, etc. Which is why I think the movie really exceeded in its portrayal.

I think the passage invites two ideas
1. Victor's ambition blinded him to the Creature's flaws, until the moment the Creature awoke
2. The Creature is structurally still beautiful, but it has aspects of horror that would stand out to its creator, who has high expectations for his "son"

I'd prefer they avoid the original characters unless it's absolutely vital they're there, and only if the original actors are involved. But I think it's been pretty well explained that Luke doesn't need to be there (since he's focused on the Jedi Academy) and Leia is focused on politics elsewhere.

My main hope now is that they spare no expense in executing whatever plan there is for the Ahsoka series and all the stories swirling around the New Republic era.
