It seems Drupal's Google Tag module has support for Server-side tagging but no clear up to what extent.

I guess it depends on how you use it.

It seems a good tool in good hands, although it means more costs (more requests to process, because the client doesn't request third-party resources anymore).

I have been reading on Server-side Tagging (using a proxy in your domain between third-party services and your visitors). It's crazy because some say it's better for privacy while others say it's better to gather data (because you can bypass most privacy protections).
