You can check out scuffward's or chained_tan's sketchfab page for examples of drawing the hair by hand on planes. And there's always model's resource ^^ in the case mesh is triangulated, select it in edit mode, hit f3, tris to quad

You can usually settle on your hair shape being a trapezoid, or a triangle- you can change it on the go!

It took me such a long time to finally try this method because I wasn't that much of a fan of how it looked in tutorials that were available at the time. It definitely helped me with defining the general shape before committing to it. Turned out less messy than when I tried to freehand it too
