My niece finished shift & volunteered to perform the care / hospital visit - so I volunteered to cook dinner.
She & her fella dropped off a farmshop chicken, then went hospital visiting.

Super sloppy (lump free) mashed potatoes, roast chicken & steamed sprouts.

I may have hidden the legs πŸ˜πŸ˜πŸ˜‚πŸ˜‚πŸ˜πŸ˜
A bacon roll complete with a couple of slices of grilled tomato 😍πŸ₯°πŸ˜
The Pear Tree is a delightful pub.
Prepping Garlic Butter for tomorrow night's dinner.

200g of Butter
6 x Cloves Garlic
1 x Large Sprig of Rosemary
Lots of Thyme

If you experience a strong smell of garlic in the #Edinburgh Southside - I confess that it might be me.
I have been roasting Bulbs of Garlic & prepping some Garlic butter.

I have a Bluetooth sleep mask but I am struggling to get something that zones me out.
I would be delighted if I can aim for more than a couple of hours sleep, every 2 or 3 days.

I am a bit like that with steaks, I very rarely order them whilst out - as I am always a little worried that I will leave the restaurant thinking "I could have cooked that at home".
How to roast a chicken?
I naturally assumed that my chicken roasting skills were quite good.

If the recipe asks for 3 cloves, double it (and ALWAYS start with the biggest gloves first - Life is too short to peel skinny cloves πŸ˜‚πŸ˜‚)
I work long hours, during the week, so batch cooking over the weekend allows me to prepare a meal for Saturday or Sunday & many portions for the freezer (which can then be prepared in a really short time mid week)
Plan, Prepare, Practice.
Batch cook & plan well - you will soon have a well stocked freezer of "go to" mid week suppers.
I have the following, in my freezer:
3 x Bolognese
4 x Chicken Chasseur
3 x Beef Bourguignon
3 x Shepherd's Pie
Various Curries
Various Soups

Mid week we just add veg/rice etc..
