Seconding this as Vivaldi I've found to be consistently based so far! Small company that's anti ai (CEO said it themselves) and has loads of customizability so you can really finetune your experience. Only issue is the chromium base but extension compatibility I find makes it worth the trouble
I generally advise AGAINST Firefox forks because they'll be slower to adopt security patches but if you must, choose one who is quick to adopt security patches.
Otherwise in Chromium world, Vivaldi is a good non-corporate option.

Setting up a jellyfin server has honestly been such a good alternative to all the modern streaming price gouging bs I have zero regrets and it allows me to share media with my friends so much easier
