Not in Portugal, at least the payment option. We use an ID card for everything, or equivalent to the NIN and NHS number is some other information on our ID. Some Portuguese don't even have passports as the card is suficiente to travel between EU countries.

You swipe some form of ID, not to go to the park, but to go to work, public transport, access to a football stadium, the gym, shopping with all store cards, etc. Unless we go completely of grid, no bank account, no nothing, our data is everywhere

In a way, you actually do. If you have a phone or broadband contract, the companies do a credit check with data they gather from others, including the government. I know I'm exaggerating, but we live in a world where you can't hide even if you want to

I don't know what the specifics are. In Portugal, you always have to carry your documents with you, including drivers licence. I'm so used to it that I have lived in the UK for 13 years and still carry my documents everywhere

It's still mandatory to update those documents, like moving adress, even if initially you gave your data voluntarily.

Doesn't it already happen with passport and drivers licence? What would be the difference about having an ID card? Not being difficult, just don't understand what the issue is, maybe because I have one since birth
