For me, depends on the dish. We probably use equal amounts of tofu, beans, and alternative meats. You’ll find that tofu is incredibly versatile. Check out Tempeh too. Not everyone loves it, but it’s less processed. Steam it first, then marinate it for better flavor.

Tofu is cheap as hell, an amazing protein, works well with any type of cuisine, and is easy to work with.

I suggest squeezing out the water with a towel and weight (like a heavy book), slicing it up, and marinating it if you have time.
