Odyssey is excellent, and not too bloated (though there's plenty to do). Seconding the recs for Origins as well; mechanically it's similar, but much more concise.

Lords of Shadow! This game randomly popped into my head the other day! I had a copy but barely played it; shame it's not really available on current platforms.

George Miller was a doctor before he was a director. That means two things:

1. The injuries in his movies look absolutely bone-crushingly realistic.
2. He's serious about safety on set. He accomplishes loads of dangerous shoots with surprisingly minimal injuries.

Yeah, Yakuza: Like a Dragon would be good to play first. All the others aren't necessary though.

Like a Dragon: Infinite Wealth! Definitely do BG3 too though.
