Does anyone else have anxiety about things like this? I don’t know why other than (waves hands around) but I’ve got the anxious urge to collect things for a post-internet/off the grid life. Records, books, seeds, patterns. What things would/do you buy for that kind of reason?

The brine is vinegar, sugar, salt, mustard seeds, celery seed, and turmeric. Simmered the brine until the sugar dissolved. Dumped in the rinsed and drained veggies and brought to a boil. Into jars and processed for 10 mins and let rest for 5. They’re done! Now just need to cool and store. 😊🍜🍽️

Next up, I browned the rolls in a little butter. Last step was to toss the shaved chicken breast on the pan w/garlic, Worcestershire, Italian seasonings, beef boullion, & splash of beef broth. I sautéed it until almost done then mixed it w/the veggies. Topped w/provolone and ranch to finish. 😍🍜🍽️

Sandwiches next. I’ve got peppers, onions and mushrooms in the pan first. I want to get them fully cooked before I start with the chicken. Then I mixed together, sprinkled with beef bouillon, cracked pepper, and a splash of beef broth. 😍🍽️🍽️

Gonna make the squash first since I need to do it in batches. Dipped in egg & a mix of homemade breadcrumbs, garlic powder, Italian seasonings, & parmesan. Sprayed w/oil & cooked at 400 for 13 mins flipping halfway through. They’re so good. Tastes like an onion ring that’s creamy in the middle. 😍🍜🍽️

Of course! It’s a sandwich traditionally made with thinly sliced beef cooked on a griddle. It is usually served with onions and melted cheese. They can also come with peppers and mushrooms. I’m making mine tonight with chicken, onions, peppers, mushrooms and cheese.

Bread and butter pickles 🧵

I’ve got my sliced cucumbers and onion salted. A couple of these cucumbers are a little big but I’m going with it. 😀 I’m gonna let that rest for about two hours before I rinse. I’ve got my jars boiling now to prep for canning later too. 🍜🍽️
