Hmm that's tough. Generally dragons are not the hardest battles but
DAO/DA2: mostly fine,
DAI: huge damage sponges, caused the most stress and made me prep the most,
DAV: really get the adrenaline pumping, but if you know how to deal with the attack patterns it's straightforward.
So I guess DAI?

A - My first playthrough of the first 3 games was in exact reverse order. Needed DAI graphics to get me into the series, then went back to DA2 to figure out what all this business with Hawke was about, then finally I had to go back to the Origins of it all.

A - Absolutely loved it, have always loved it, spy mission at a party + court intrigue really scratches an itch for me!
