Also the first time I tried banh hoi at a restaurant like damn it was so impressive! They are very al dente and have a great texture. So to know that you can make banh hoi at home, so easily is a game changer.

I’ve only tried banh hoi in a Vietnamese or Vietnamese-ish context but I feel like they could be a good stand in for lots of dishes, or times when you just don’t want to spend ages cooking rice or noodles. I don’t think they could work in hot soup but I wonder if they could be used in a stir fry ?

You can serve banh hoi with meat and vegetables which is traditional but you can also use it in rice paper rolls, and I made a noodle salad thing with banh hoi I chopped into smaller pieces for lunch
