To avoid misunderstanding, Sakaki is also a common Japanese surname and ofc not every Sakaki person are a shintoist or a yakuza, please aware of that.
But a fictional crime boss AND his name is happens to be Sakaki, the shinto tree? Surely the creator didn't pick that name randomly.

Genuine sakaki leaves can sometimes be hard to come by, so other trees can be used as alternatives, but if you see leaves used in Shinto rituals and display, including kamidana, you can generally assume they are sakaki.

His name is changed to Giovanni in the English adaptation (gee, i wonder why they gave an Italian name!), but his original name was Sakaki.
Sakaki is a name of a tree that symbolizes the gate between the divine world and the human world in Shintoism, and it's used in various Shinto ceremonies.
