Do you want to use the jellyfin UI & features like GPU transcoding, or would you be OK to just host your stuff on a regular NAS? The latter is a lot less RAM intensive. But for the former, you can grab a used workstation mini PC with a ton of RAM and an integrated GPU for a reasonable price.
