Turns out ZFS was actually fine, just the SATA cable was broken :/

I have such a hate/love relationship with ZFS, on one hand its the most stable and reliable FS i have ever used, on the other hand it required a masters PHD and a blood sacrifice to get it to be performant and figure out how to use all its features
