We use it in our hummus (a lunch staple), and it gives a lovely dimension of flavor. I wouldn't replace fresh garlic with roasted in most recipes, but it's often a nice addition!

Confit garlic:
Lots of peeled garlic
Cover in olive oil in an oven-safe container
Bake at 250F, 120C for a couple/few hours, until it smells amazing and the garlic has turned a pleasing brown

Allow to cool, spread on toast, add to recipes, generally treat like roasted garlic. (2/3)

We got a huge bag of peeled garlic last week, so it was time to make confit garlic!
It's similar in flavor and use to roasted garlic, but it's easy to make large quantities -- and you get bonus garlic oil.

Yeah, it's hard to say goodbye to your favorite time of year for a full 6 months! I lived in the Bay Area for a few years, and the shorter days were still pretty noticeable.
Nothing to do but find a fuzzy blanket, a hot beverage, and dream of spring ;)

Autumn is definitely here. We're far enough north that the dark is creeping in noticeably at both ends of the day.
Nova is happy for us to spending more time inside with blankets....
A fluffy brown and black kitty (mackerel tabby with with a long coat, so it just comes out dark and fluffy) reclines on legs under an off-white afghan. She looks highly pettable.
