Take time to rest. I'm not punishing myself for not being able to do anything but be present in this capacity. Do the same for yourself. Accept that you are on strike and relax into it. You'll thank yourself for it later.

I'm sitting here trying to convince myself that I need to be doing some work in my bedroom. Or sitting outside trying to keep my whining MIL entertained. My brain has decided that I'm not going to be doing any of that. I think I'm on a general strike.

Cornbread is a bit tricky if you don't want to make it from scratch. We had to order Bob's Red Mill online this year. It's hard to find. It's almost easier to make it from scratch I think. My hubs is better at it than me. I'm going to have to start working at it myself.

It's usually double the price & half the size. I've used both King Arthur & Bob's Red Mill. I like them both. Both of them have recipes on their websites. If you want boxed mixes for quick & easy treats I recommend Miss Jones at Wal-Mart. Make sure it's the gluten free. But they're delicious.

Check the ingredients list. Check the warnings. Cross contamination is a real thing. There are so many recipes online that are gluten free that I can't begin to give you any. But we just substitute 1 for 1 flour in most of our normal recipes. All the flour is expensive, I won't lie. Every thing is.

Sorry for not responding sooner, I have been so busy. One of the first things I will advise is to know your food allergies. If you have a nut allergy you will want to avoid certain flours, etc. That's the most important tip. Also trust nothing. Unless it says certified gluten free it's not.

Enjoy your time in Florida? I live here so I do have to say it questioningly since I don't particularly love this state. That said, some parts of the state will be cooler on Thursday & Friday. So there is that. 🫶

My hubs makes a killer pecan pie for me. Gluten free. My opinion is that as long as it's not peach & is gluten free I'm gonna be standing in line for the pie. I'm iffy on pumpkin & key lime but hey I only have an issue with peaches. Blame it on the schnapps.

It's a challenge living gluten free. I've had to adjust to many changes since I was formally diagnosed. The amount of things that just don't taste as good store bought that are gluten free is astounding & don't even get me started on the prices. Double the price & the taste is awful for 'pop tarts.'

I have to get both once a year. If they don't like my mammogram scans they'll put me back to twice a year again. I hate the prep for my colonoscopy but I make sure I have soup waiting for me at home. Every year whether I like it or not.

My cats see me stressed out or in pain and they immediately lie on me to calm me and keep me still. Better than my dog who barks. 🤣

Rabid? I have survived my non-ambulatory, cranky af MIL who has signs of dementia today. She's currently staying w/ us while recovering from surgery & we took her shopping. While she was getting tired. I'm doing things I swore I'd never do & I'm not screaming. Fuck rabid I'm just tired.
