You can get around the pausing if you boot your world in multiplayer and just play by yourself I thinks.

The reason you want to spread out your NPCs and keep them happy is they can sell something called a "Pylon". This is basically a fast travel point and there's one for most biomes. Also NPCs not only care about how many are in a building, but also who and which biome they live in.
