It's not often that I try 'hacks' I stumble across, but this one actually worked. Grab around the stem of a pepper and push it in on itself like you are trying to push the stem into it. It breaks pretty clean and keeps the stems intact and seeds in place.

Tonight was two firsts. One was eating eggplant. The other was using za'atar. Breaded slices of fried eggplant were used to make a lasagna with za'atar instead of Italian seasoning. It was delicious and accidentally vegetarian. Would recommend both for sure.

Our now 8 year old loves chickens, so her birthday cake was a sheetcake with green frosting and a mix of big and small cupcakes. A small ball of foil in the tin gives them a crescent moon shape.

Sorry for being so bad at social media. This month we hit 1451 total meals distributed through the right to food center. Some of those were these tenderloin roast medallions and garlic cheddar mashed potatoes with onion gravy. Pumped that the chives in the mashed came from our own garden! #foodaid

One of our dishes this month was pulled pork with an apple habanero bbq sauce and home fries. 110 total meals were served.

Coleslaw, add a chopped onion to one of those preshredded mix bags. For the dressing start with a cup of mayonnaise and about 1/4 cup of olive oil. Then some vinegar, sugar (i used splenda), onion and garlic powder, celery seed, mustard powder (PCs Dijon Rub is great here) salt and pepper

Our community mutual aid for food insecurity. 15 ham dinners are now on their way to the food shelf for distribution. This puts our numbers at 112 meals for the month, and since hours have been cut, we will hold here and make sure the food moves since prepared meals in the trash don't help anyone.

The #foodshelf challenged us this week to help use up frozen diced peaches. Chef Matt cooked them down into a peach compote to go over pancakes with bacon and home fries. They weren't made in a dedicated GF kitchen, but they were made specifically with King Arthur gluten-free flour.

Spent a couple hours with steel wool and barkeepers friend, completely redoing a rusted griddle top last week. Now, I am only capable of cooking on the blackstone until this hyperfixation wears off. Last night was a chili and dill blackened salmon that I fell in love with the picture I took of it!
