I have 6 chickens in my backyard, the one in my pfp is a brown red ameraucana named fireball. You can also see one of my three rode island red chickens named chanticleer, as well as a barred rock and light brahma.
Chickens are surprising easy to take care of as long as you just supply the proper food and water, and they give plenty of eggs! Also, you would need to get at least two chickens, since they are social creatures. But I'm assuming that you just can't do to local laws or space available.

Sorry I couldn't respond earlier, I'm not here very often. If I had to choose, it would probably be Fireball! She's the chicken in my pfp and has yellowish feathers that extend from their head, thus why they are called Fireball, and also has a beard! They are a Brown Red Ameraucana.
