Tonight’s supper was Cajun sticky chicken, and the brown sugar did the heavy lifting. Not to make it sweet, just enough to help the skin caramelize and the sauce cling. Cooked low, left alone. Fingers sticky, plate clean. C’est bon.

Game day gumbo. Chicken and andouille, built the slow way. Dark roux, trinity cooked down till it smells right, stock added with patience. Laisse mijoter. This the kind of pot that feeds folks and keeps ‘em parked on the couch.

Didn’t plan breakfast, so breakfast planned itself. Biscuit dough, smoked sausage fried in a cast iron, gruyère, and a little Slap Ya Mama. Flattened, stuffed, baked. Whatever you call that, it worked. C’est bon.

Last-minute soupe de patate, or ragout de patate, depending on your parish. Forgot to thaw meat, so I went in with sausage and bacon. Couple garden carrots, trinity, roux, potatoes smashed into the pot. That’s Cajun cookin’ for ya: work with what ya got.

My local grocery had thin-sliced ribeyes on sale. Too thin for the grill, so we didn’t get fancy. This ain’t a named Cajun dish, just how Cajun cooking flows. Browned them quick, dirtied the onions with the fond, smothered it into rice and gravy. Supper made.

Smothered pork roast this weekend. Browned good, then covered with onions and thyme. That’s old Cajun cooking—make it tender, make it stretch. Faut pas presser ça (don’t rush it). The gravy tells you when it’s ready.
