Lower the temp that you cook it at.
Once you've folded it, turn the heat almost off, and put a lid on the pan, flip after a minute or so then wait one more. That'll finish the cheese without killing the eggs.

Or cheat: Warm your cheese first and put it on the omelette mostly melted already.

Agreed! I've been enjoying the financial and taste benefits of enjoying chicken hearts for a good while now (obvs in addition to, not replacing, my regular diet) and I love (well cooked) liver so...
I'm no ghost to "unexpected meat"but I'm with those who serve it: WHY waste food if you make it good?

I was a little freaked out cuz, well- tongue, lol, but I've seen YouTubers try it and they all loved it, so when I saw it on the menu I had to, and I'm glad I did!

I'm definitely now a fan myself! It was very tender and delicious. And for a plate bigger than my head, the $8 price was unbeatable!
