So all in all I'm extremely happy with the chili. As for tonight's meal, I kept it simple with a little sour cream and that was the perfect compliment. 10/10 I HIGHLY recommend this recipe.

I wasn't sure how the chili would turn out with the tomato soup. It was a bit runny at first but today I let it go in the slow cooker to reduce it which worked perfectly. Also, the spices in this, particularly the cumin and paprika are amazing

At $22 that makes it a little over $3 a serving, this is very good for you with lots of vegetables and protein. The nice thing about chili is that you can eat it so many ways.

So this pot is really full so this will be enough for about 6-7 meals and the total cost of ingredients (not including spices) was $22.

There it is! All told this only took about 20 minutes to put together which makes it really great for meal prep.

Now is the fun part where you get to dump everything in the slow cooker. In addition to my cut veg and rinsed beans I also added a can of corn.

For the 'base' I forgot to buy tomatoes at the store and thought I had a can of tinned ones already. I did not. So in place I'm using 2 cans of tomato soup and 1 can of tomato paste. I added 2 soup cans of water and stirred until everything was mixed.

Next you'll need to dice your vegetables. I actually used a slicer for this because I'm lazy. I will say its great for something like chili or pasta sauce because your pieces will be uniform. So in here there is: 2 jalapeños, 1 small red and 1 small yellow pepper and half a yellow onion.

Then you need to season your tofu as this is the 'meat' of the dish. I used paprika, cumin, garlic powder and chili powder, about 1 tsp of each along with some salt and pepper. Mix then set aside.

First up: open the tofu and drain. Then press with some paper towels to get the moisture out. Cut into quarters and grate 2, the other 2 you can keep for later.
