Thats pretty much how I do it too, although my loaves rest for ≈10 min give or take between pre and final shape.

The goal is to bake 400 loaves a week, and Rofco is at the limit currently with 200 loaves. And i would honestly rather just sell it at this point, because of its inherent problems.
