I had some frozen figs from the summer and made one of my favorite pasta sauces tonight…with olive oil, guanciale or pancetta or bacon, shallots, garlic, fresh rosemary, white wine, chopped fresh figs, lemon juice and finished with freshly grated Parmesan cheese. Fantastic!
