boil together equal parts sugar and water, should be the same amount of pith you have in cups. add pith, cook high for 3 min, turn down to simmer for 20-whatever amount of minutes until syrup is absorbed/evaporated

anyway remove pith, chunk it, boil 5 min, drain, rinse cold, squeeze, repeat
