It was a LOT, and a project that just kept growing, some small oops-es along the way, but I'm super proud of myself for doing it. Probably the biggest repair job I've done on a car to date.

I use a clear acrylic spray sealant, but there are a lot of good options out there.

It depends on the effects you're trying to achieve and what kind of paint you're working with. I use drawing inks and acrylic craft paints, both of which do better straight on the unsealed wood, and then finish.
