A cheap(er) meal prep I recommend is overnight oats! A big thing of store-brand oats is 3~4$. I use store brand soy milk (3$ for one). That can make breakfasts for about two weeks. I like to add in bananas or frozen blueberries.
Not the super cheapest thing, but it's one of my staples!
