It's a matter of 🇺🇸 English v British English. In British English, we tend to use n dashes. In American English, they predominantly use m dashes. So AI trained on mostly American material will use m dashes.

As the mother of a daughter who loved Harry Potter, and now is an adult, identifying as bi and totally accepting of trans people, I find it hilarious that she is losing her original fanbase.

Sounds really interesting. Me, I'm filling in a spreadsheet to show where various activity types required by EU policy are in a text book for secondary EFL students. I'm not on the edge of my seat!
