And yet what happened to Houdaille was considered a success. The management fees alone. The incentives are upside down.

My new (to me) RHL Loom is all dressed and ready to weave. Her name is Margaret. She's a 10 inch Ashford Sampleit. I wanted a loom that could fit in my lap. Direct warping this was so much easier than my 32 inch loom. 🧶

Sourdough five. Did I actually overproof?

The shaping on this dough was not as good. But, this loaf is my lightest. It doesn't feel heavy and dense. And looks like I have crumb through out of not.

Tasted really good but chewy. More details on recipe below. 🧵 🥖

I haven't posted in a few days. Honestly I've been grieving for my city. Things really hit hard on Sunday. I allowed myself to really feel what we've been living through. And thank g-d for my knitting. It's been a balm for my brain. I look up and I've overcome second sock syndrome. 🧶

Sourdough attempt number four. This didn't spring as much as the last. And there was tunneling but I have crumb through out, it's not as dense as others, and this dough felt the best to me when working it. . But seems Im still under fermenting.

Third sourdough bread attempt. I think this is my best attempt yet. But what do you think underproofed or overproofed? Crust cracked on side. Little chewy but not gummy. It sounded hallow when I tapped it but still feels heavy. Definite sourdough flavor which I like.

Second attempt at sourdough. This loaf's felt much better when doing stretch and folds. It's not gummy and the crumbs is improved. And this loaf has spring when I squeeze. But, I tunneling and still a bit dense.

I do not think this is under fermented.

It's a chilly morning, Friday, I'm tired of managing my hair: time for the hand knit hats.

I improvised this hat. I call it bubbles and squeaks 🧶

Final result. Well it looked nice on the outside but as I feared inside it was gummy with a never crumb. It does taste good, however.

So I'm pretty sure I under fermented the dough. But, for my first sourdough with a homemade starter, I'm going yo chalk this up to learning experience

Fresh out of the oven. I have baked sourdough bread. I was very nervous because coming out of the oven this morning the dough had fallen. But I reshaped it into a ball. We'll see what the crumb is like.

He liked to nap at my office door when I'm working. (Really he's patiently waiting for his next walk)
