Hi! 👋 I'm VB! This year I pledged to get more serious about cooking, and I'd like to use this place to share my food and meet new people. My stuff is always vegan and usually gluten-free. Nice to meet you! 🥕

I'd never heard of wine daube, #Vegan or otherwise until @carrotsbeetrootsandgravy.com posted about it, but I had to try it, and wow! is it good! I garnished it with parsley & served it with rice (instead of the traditional [?]) pasta and buttered baguette. Recipe in ALT. #veganfood 🌱🍽️🍜🍄🥕🍷

Red wine daube with olives and tofu. It always wigs me out how much the tofu ends up looking like beef when I cook it like this. I had about 1/3 of three different bottles of wine to use up and this was a delicious way to do it!

I like "I Can Cook Vegan" by Isa Moskowitz so much I'm trying to make every recipe from it. Here are a couple of highlights - broccoli mac n cheese (sooo good) and some choc chunk rosemary cookies I made today to take to a party with rosemary from our garden. Ngl I'm chuffed as

I don't know anyone personally who needs one, so I think when I get an invite code I'll make a second account to reskeet vegan food posted here. It's hard to find other people at this stage and I think it'd be nice as a sort of archive 😊

I feel like the max number of ingredients a recipe can have and still put "only/just [#] ingredients!" in its by-line is 4. "Only 6 ingredients!" is getting close to the normal amount of ingredients I would expect for something basic. "Only 8 ingredients!" Now you're just taking the piss

Made tantanmen (Japanese version of dandan noodles) the other night, but vegan and gluten-free. Pretty pleased with myself because it was utterly delicious. Added some Korean mandu from the brand Bibigo since they were on sale. Gonna make this again for sure 🍜

Today's attempt at menemen, a Turkish scrambled egg dish, except using besan (chickpea flour) in place of eggs. I forgot the chilli 🫣 But the flavours and texture of this were sooo good and satisfying, especially on crusty bread!

Interesting experiment - chai spiced brownie with whole baked pears. Not my favourite but not bad either, and quite beautiful too.
(Not sure how tagging works on here, so - keywords incoming - vegan, gluten free, cooking, 🍐🍐🍐)

Last night's experiment - veganising this spinach (yes, spinach! Not matcha!) cake from Primal Wellness primalwellness.coach/2023/08/07/s...
Mine might not be as pretty, but it was so tasty! The recipe was already gluten-free and I used coconut whipping cream for the filling. So good 🍰
