Happens a lot with L1 (intracompany transfers) and other visa types as well. Can't apply until ~3 months before expiration, renewal usually takes about 6 months.

I feel sprouts are an example are worthy of a mention here.

My first thanksgiving I cooked one, I borrowed the "traditional" huge vat of oil over a butane burner.
That Saturday I went a got an electric frier that I kept using for the next 6-7 years or so.
Then I got the air fryer, so much better

Its not that hard to do, a bit messy though.

I moved to air-fried turkey over 10 years ago. I have a specialist air fryer that fits a whole turkey (up to 14 lbs IIRC). Keeps it far more moist that a traditional oven.

I finally put my spoon down, and took the bowls out.

Over the years we had many laughs about these experiences and a few others.
She sadly passed a couple of years ago, some 20 "bonus years" after cancer nearly took her from us.

It was during COVID so I only got to attend her service remotely

Equally good hot or cold (I actually prefer hot).

The second was she wanted to try a new recipe - Carrot and orange soup. I dug in as any prospective future son-in-law would, until they both stopped eating theirs and looked at each other. Stella said "Mum, this is awful", and her mother agreed.

Her first fun one was she was making some prepared meals from a local small restaurant/pantry type place. She was so flustered she put the wrong trays in the wrong place.
So our meal consisted of chilled stuffed vine leaves and baked/hot hummus.
