also i was afraid i had instantly burnt the mushrooms due to the initial searing temperature (i’m new to electric and stainless steel), but instead it gave it a rich smoky flavor that worked really well.

i went to clean the pan and there were some juices left over and i sampled a little bit with my finger and it was heaven so i sampled some more and i even considered just lifting the pan to my lips for one big slurp but my wife was watching me so i thought better of it

yesterday i made silver-dollar sized sautéed portabella mushrooms covered with sliced mozzarella and a balsamic vinegar glaze (sautéed diced red onions with balsamic vinegar, brown sugar and salt, reduced to “sticky enough”) and i’ve been thinking about it all day. so simple but so delicious.
