Weirdly, the baby plants can do just fine in a glass of water. I suspect they develop a different type of roots in that context.

I have a few baby plants in water right now. If you want to try again, let me know and I'll pot one up for you.

You might also try a location with less sun, esp if the leaves go a little yellowish instead of a nice green. I've had good results with bright indirect light like a north window. If it's bright enough, they don't need to be in a window. They like humidity too - a bathroom can be a good location.

If the leaves start to go black at the tips, that means it's getting too much water. (Ordinary die-back is more tan/brown.)

If it's getting parched, the leaves will start to go a little yellow and curl inward, though this is kinda subtle. But with water, they'll recover.

My best guess is overwatering. They seem to handle soil that's too dry better than too wet. Once a week is OK, but less water at a time - let it dry out pretty thoroughly.

Plastic or glazed pots retain water well so the soil takes quite a while to dry out compared to unglazed terracotta.
