Added the water and the butter and kneaded each bowl until it passed the windowpane test. Now for the first proof while we go out to xmas eve dinner and I’ll do the lamination before the second proof overnight.

Waiting for the butter to soften so I’m setting these aside. Once the butter is soft enough I’ll toss 250g of water in each bowl to start the yeast and then mix them with the dough hook until they pass the window pane test then its on to the first prove and time to make the butter block.

Here's my swamp rose mallow (Hibiscus moscheutos) blooming for the first time in our pollinator garden. I transplanted this almost three years ago and I was certain it didn't take, but this past June I saw it and another transplant I was sure had failed sprouting up and sure enough we got a bloom!
