If you make the demon's more nuanced you now need to interrogate the morality of the conflict and realistically you also need to work towards a resolution to that conflict which should not be handled lightly. At that point you are telling a different story.

I'm sure it could be called lazy world building but also I think it just adds too much baggage to the story the author wants to tell. Ultimately the story wants to be focused on Frieren's relationships.
