This is a super bougie fish burger made with a beer battered hake fillet, homemade ranch dressed rocket leaves, double melted cheese & prawn cocktail burger sauce made from scratch with diced poached prawns in a seeded brioche bun.

Cooked some Japanese food tonight. Pork belly, slow cooked, lightly brushed with soy & togarashi. I trimmed the ends & cut them into pieces, fried them off & used the rendered fat to cook the egg for my fried rice.

90s style cooking with, Chicken Monsieur, chicken breast wrapped in pancetta, then finished with a cheese sauce over the top, then flashed under a grill with some vintage cheddar and served with garlic mushrooms prerequisite potato wedges.

A take on the famous Rigatoni Al Segreto from Ginos in NYC, by adding homemade Italian fennel, onion & black pepper sausage.
I'm generally against messing around with classic recipes but this really does work. The finely minced sausage complements the sauce.
