Have been seeing some changes on food trends in restaurants.
- Food now is not overly complicated. You don’t see a lot of components that you sometimes don’t understand.
- Food in restaurants is going back to food basics which is elevated home cooking. Simple and easy

Pandesal

Growing up back in the Philippines, Pandesal was one of thos food that really makes me think of home. Spreading it with Reno Liver Spread and eating it while it’s hot is the best thing ever.

I made our pandesal and made a truffle mushroom pate. This dish is Vegan but dang it’s good.

Adobo is known to be the Philippines National Dish.

So I made the sauce how my mum would make it but added some Paprika and Garlic Oil, Salmon Caviar and Fried Garlic.

Instead of Pork and Chicken, used King Fish instead.

I really enjoyed making these.

Been working for years to make my Filipino Pop Up Restaurant, Palay, happen in Melbourne.

This is just a start of what we can do in terms of our food and culture.

Raising the Filipino Flag in a foreign country isn’t easy, but it’s definitely worthwhile.
