I have doctor diagnosed gluten sensitivity. If I eat a bite or two of something containing gluten, I am fine. If I eat a lot of gluten, I am not fine

Some wheat varieties really do have lower gluten content. Of course there is no way to completely remove gluten or make it “safe”
