I dropped my festival kit off yesterday to the wonderful BikeToGlasto crew near Hammersmith. Today I’m doing a big batch cook to help my wife solo parent and for my own festival snacks. This time tomorrow, hopefully I’ll be over halfway on my bike ride to #glastonbury

Sill all go in the kitchen. Dad’s birthday is on the 26th and this Loving It #vegan chocolate #glutenfree or ‘Everyone Cake’ was the best chocolate cake I ever made. I can tell which is going to be the bottom layer 🙄 #veganfood

For me stollen beats mince pies hands down: the soft texture, the sweet icing sugar on top, the fruit, the marzipan…sigh. There’s a recipe for it in Freya Cox’s book Simply Vegan Baking that drew me to it in the first place because finding a #vegan one is tough. So here it is proving #veganfood

Golden frangipane crust on top of mince pies from a recipe by Freya Cox in Simply Vegan Baking. My home testers liked the pie crust but were ambivalent about whether frangipane was better and want to do more mince pie testing. #veganfood

There was finally a bit of time to do the long awaited tandoori cauliflower from Meera Sodha’s latest book Dinner. Spaced it out across the day between work and watching my son do his ballet show. I was impressed that he even tried the pickled onions. Recipe here www.pressreader.com/uk/you-1297/...

Sums dinner up for tonight. 2 different meals, 1 plate of pie (pre-made) for the father-in-law and 8 yo who emulates him, black bean & onion braised tofu for the rest of us. Flapjacks being prepped for after school snacks.
