Today is the winter solstice. Particularly alone this year at a time of reunions and stuff. But I think I’ll be ok. Made myself a small serving of tang yuan just for kicks.

Made kimchi pancake with shrimp. I remembered some lard I had kicking about in the fridge and using it to fry the pancake really does make a meaty difference.

Soooo YouTube was feeding me a bunch of videos about it being cheaper to make lox at home. I’m not sure about the quality of the frozen salmon here but I sure hope it’s ok. So here’s that home cured lox. It’s pretty salty and tastes fairly good?

My friend sent me a fruit basket with figs in it. I usually can’t afford to buy them. Balsamic vinegar sauce and some duck. I have much to learn about plating.

Still not happy with the openness of the crumb but it’s getting there I guess. It’s not absolutely necessary to buy one of those fancy proving baskets right?

Really impressed by those loaves people tip out with the amazingly strong skin and jiggliness. Maybe I didn’t work the dough enough.

Is the tight crumb because of insufficient hydration? Insufficient rising? Was my sourdough starter not ready? Overworked the dough? 😳😳😳 I really wanted to achieve those big airy loaves with giant holes in them.
