i’ve never made carnitas the traditional way, i didn’t know it was done as a confit until i was researching recipes the last time i made them. not this time tho. i’m going to use lard this time to make them authentically.

made proper fried chicken for the first time today. not perfect but it came out pretty good. would like to try a longer brine as i only did 9hr this time.
went with a sriracha honey sauce to go on the chicken and a side salad of arugula, red onion, feta and pine nuts in a honey sherry vinaigrette
