Add a small spoon of stuffing to each pancake and fold into a half-moon. Cook for about 20 seconds more, just to seal, then remove from the pan.

Repeat until all the batter and filling are used.

Serve hot, scattered with a little chopped spring onion.

Heat a heavy frying pan with a little oil. Reduce to medium-low and spoon in 2–3 tablespoons of batter per pancake. Do not overcrowd the pan. Cover and cook for 1–2 minutes until golden underneath and just set on top.

Add the mushrooms, spring onions, soy sauce and vinegar and stir fry for 3–4 minutes until cooked and fairly dry. Transfer to a bowl, stir in the sesame oil and set aside.

Make the stuffing. Finely chop the spring onions. Clean and finely chop the mushrooms, using both stalks and caps.

Heat the olive oil in a non-stick pan and fry the pork until broken up and lightly coloured. Add the rice wine or sherry and cook until almost evaporated.

Cover and leave in a warm place for about 1 hour until bubbly and frothy.

Method

Start with the batter. Put the flour and yeast into a large bowl. Dissolve the sugar in 100ml boiling water, then add 100ml cold water. Lightly whisk the eggs and add them to the sugar water once it has cooled slightly. Gradually whisk this into the flour to make a smooth batter.

3½ oz minced pork (about ¼ lb, 12% fat or higher)
2 tsps rice wine or dry sherry
1 tsp light soy sauce
1 tsp teaspoon Chinese black vinegar or apple cider vinegar
1 tsp toasted sesame oil
