With an offer letter in hand, I guess the "get a job" line item from my 2026 goals, can be marked as completed. It's going to be good to be employed again. On to the next goal!

After God knows how long on the smoker. It wasn't until 22:41 when the meat thermometer binged. I pulled the pork shoulder out and let it rest. These will become some pulled pork and some delicious tamales.

As mentioned before, were going to be making an enormous batch of post-Christmas tamales. These have kinder Chile Verde seasoning on them.

My rough goals for 2026 are:
-----
1) Paint minimum 2 times a week, ideally more.
2) Get 2000 points of AOS figures painted.
3) Work 2 days a week on my game idea, minimum.
4) Look for gainful employment. Study interview material.
5) Do some charcuterie.
6) Bake more. Specifically some baguettes.

Made a cheese board. Having a nice slow Sunday. The GF is doing her nails and I'm googling some recipe ideas, watching some gaming on YouTube. I have plans to do a cheesecake. There's a perk shoulder thawing. The plan for that is to do a huge batch of post Christmas tamales.

I made homemade thin pasta noodles. The noodles turned out well. The dish, was delicious. I'm pretty upset that my sauce didn't emulsify properly and split. Flavor? Great. Texture? Not the best. The dish was pasta al limone. I need to practice making the sauce.

After discussing things with the GF, we're going to do large batches of caramelized onions. Then freeze them in Ziploc bags. Since we can use them in a number of dishes other than French onion soup. Maybe using hoteling pans or larger baking sheets. We have plans for preserving garlic as well.

I made some French onion soup today. As a part of the holiday meal. I should've used less salt on the croutons. It came out delicious but just a touch too salty. As delicious as this turns out, reliably every time. I don't know why I don't make it more often. I should freeze it in large batches.

I've been thinking about next year. I don't usually subscribe to NYE Resolutions. I have goals I want to accomplish next year.

I usually feel like if you want to make a change, you should be able to do that any day. If you need to do it on a specific day, for it to work for you, then go for it.

I made some snickerdoodles. I followed the recipe, I was expecting something else. I was sort of expecting something similar to the molasses cookies I made previously. It has a nice chew. They taste like snickerdoodles.

I might be losing faith in online recipes. Maybe it's just that website? But I've done two Indian recipes lately and I've been very disappointed. Like to the point of taste testing things and asking myself "Do I have COVID? Where's the flavor??".

I think I just need better sources?

I saw this and.. I know it was cliche. My first thought was: "And they say dreams don't come true.". My goal this weekend or next week is to make some quality chicken tikka, butter chicken and some deeply spiced and seasoned saag paneer. I'll be using King Arthur's recipe for naan.

This looks great! Seriously, I think the next time I'm asked to do a charcuterie board, I am absolutely going to be making this!! I sort of suck at crescent dough, or fluff pastry, croissants, etc. This would hopefully be worth the effort!
I learned how to bake a Cornucopia made from Crescent Roll dough from a video. Turned out pretty cool. Was a hit at Thanksgiving!

I have got to do some painting. I have a bloody grocery bag of assembled and primed figures. I have a ton of goblins. But maybe I'll do a necromunda ganger. I wish I could have a poll, but oh well. Perhaps I'll work on the trolls, finish up my actual army list or goblin wolf-chariots.

So we ended up having friends over last night and had dinner. Sort of having time with friends when they are available. Since folks have obligations on Thursday. There were a total of 5 people, there was a lot of cleaning involved.

I made a cranberry tart. I'm excited. But also peeved. It's not smooth. I want the surface smooth. But oh well. I'm looking forward to the almond flour crust. Hopefully it turns out well! I'll get a cross section pic later.

It's been weeks or months since I've painted something. I really need to work on my little gobbos. I feel like I've made progress posting food pics. But my miniatures and army progress has certainly been lagging lately. I have a ton of figures during the summer that I primed.

The GF bought ingredients for a pie and has communicated to me about a desire for pie. I have the goal of making a key-lime pie this week. The surprising thing is she bought Stroopwaffle crumb for the pie crust. We don't have any whipped cream, but I could make that. Not sure about toppings.

I just haven't had the spoons or mental energy to do any hobby or craft stuff for painting lately. I feel like my backlog is just growing. But I also feel, if I don't have 4-6 hours to invest and solidly focus on painting. I just can't do it. I feel like 30min at a time isn't sufficient.
