Quite late to this.. but have you tried ddocs.new? Super similar to gdocs interface but fully private, no mandatory ai, and more customisable :)

Oof very late to this.. but I'd recommend ddocs.new
It's privacy first (e2e encrypted), customisable (darkmode & other colours), syncs cross device, and has markdown support :)
