For Embassytown - stick with it. Its hard, there's a lot of jargon and it takes a long time to learn but once you do its a riveting world and story. Hope you enjoy it

Yeah, do whatever pleases you but i think they make good companion pieces. There is a longer gap than i recalled (12 years in universe) but it follows Paul and other know characters. Book 3 and on add a bunch of additonal characters unrelated to the plots of 1 and 2.

Messiah is a pretty direct continuation so it may be worth it to push the gap book until after. It's also WAY shorter than Dune.
