While there’s a lot of super far right OCers using Tennessee as a tax haven, I’m always taken with how effortlessly cool, confident, and charismatic Californians are.

STK earned a reputation right out of the gate for being unnecessarily expensive, so I looked up a menu from when they opened in 2016:

“Lil BRGs:” $20 to $29
10oz filet: $46 to $79
8oz skirt steak: $28 to $57

Unsure how this compares with price creep elsewhere, but >$50 for a skirt steak is crazyyy

I think that’s exactly the case:

1. Nov, 2024: Yellow arrow shows HVAC duct installed ~2012/2013
2. Nov, 2024: Red arrow shows ceiling unit near checkout counter
3. Sep, 2010: Yellow arrow shows absent HVAC duct, while red arrow shows thermostat (presumably) to original ceiling unit

Still digging, but this was what first told me they did some rejiggering or expansion. Note the duct above the door.

First image is from Jan, 2008, second from Nov, 2024. I can’t believe they first installed A/C in 2008, but this makes me think they did…something in that vein over the years.

Since the sign literally says there’s A/C (though there are a TON of fans throughout and the early days had all walls lowered), I think there was some, but I’m pretty sure they did some additional installation. I’ll dig through some photos to compare.

When HVAC was installed in Chester & Hester’s Dinosaur Treasures, the gator skull was removed (seen here with his original McDonald’s hat).

But his wooden plaque endured! Anyone who read the (presumably load-bearing) wood block might wonder why it referred to a non-existent alligator.
