Stiff! I’ve heard an opinion that the blending with sugar denatures bacteria sufficiently to render a bit of a sip innocuous even this early.

So, with the usual losses to dribbles and bowl-clinging, we’ve got about seven litres of *really* good eggnog. Not strictly safe to drink until it’s sat for a few weeks, but tradition demands a night-of-making sample.

Until I can combine the two bowls together, alternating scoops between them gives some hope keeping the proportions even in the storage bottles.

Solution! Transfer a bunch to a different bowl, then roughly divide the remaining litre-and-a-bit of cream between them.

First thing is to separate the eggs. The tumbler has a dozen egg whites in it, destined to become meringue treats, while the half-dozen in the small bowl are just going away.
