Oh, I wasn't able to add this other method in previous post. When making an OC in a game, think about which OC would be in said game genre.
Example: I have a main OC who can be in any genre except life sims/farming/dating games so I use another OC for those games.

I used my OCs in games that had character creation. This helped to build personalities based on games' choices given to you playing as said OC.
You might even come across NPCs with similar personalities as other OCs you made. Those good/bad relationships with NPCs helps establish other OCs' ships.
