Unfortunately the "edge cases" in this case include the stuff she needs for work (like Adobe and printer drivers). And tinkering with Wine setup is still a pain in the ass for new users. I'm very pro Linux, but you can't just handwave this stuff.

You might want to try dual booting since you need Windows for those work things. It's super easy to do if you have two separate storage drives - just have one be The Windows Zone and one be The Linux Zone. Then at least you can limit your Windows time!
